Can 3 people with luggage fit in a normal cab at the airport or should be look on taking a van to the hotel?

Yes, 3 people and luggage should fit in a regular taxi cab... as long as there is not extra luggage.
We were picked up at the airport by friends, but there were 5 of us in the cab on the way home. There is really only room for 4 and luggage but we squished in and pleaded with the driver.
