How much demonstrated income / assets required for Visa?

There are no requirement for an FMT and you are good for 180 days. If and when you decide to stay longer then you need to get your FM3. Make sure your bring all the necessary documentation with you. This includes current bank statements which you can print out from your online accounts at the time.
